As winter peaks with its brutally cold weather here in Minnesota, it was time to bring some brightness with these citrus packed lemon muffins. These lemon crumb muffins come out moist and packed with a great lemon flavor. The muffins are them topped with a lemon infused crumble and glaze that brings a boost of energy in the morning. Within one bite, you will feel the warmth of a nice summer day.
In a large mixing bowl, whisk together the flour, sugar, baking powder and soda and salt.
In another bowl, whisk together the melted butter, milk, eggs and honey. Add the yogurt, lemon and vanilla extract, lemon juice and lemon zest. Whisk to combine thoroughly.
Add the wet ingredients to the dry, and mix until just combined and no dry spots. Divide the muffin batter evenly between the muffin tin, top with the crumble topping evenly and bake in a preheated 400°F oven for 17-20 minutes, or until a toothpick inserted into the middle of a cupcake comes out clean.
For the glaze, combine the confectioners' sugar, lemon extract, lemon juice, lemon zest and milk in a small bowl. whisk until smooth, adding more milk as needed to reach desired consistency. Drizzle over the muffins.
