Tater tot nachos or Totchos are simply a twist on the classic nachos. Bringing together two amazing appetizers together to make a great game day snack. The key is to cook the tater tots fully to get the crispy then top with all of the delicious toppings. While standard nachos are a great finger food, these will defiantly need a fork to be enjoyed. They also make a great base for a breakfast skillet by adding eggs to the top for a second reason to try this recipe.
Grease a pan and place the tater tots in a single layer. Bake the tater tots according to package directions until golden brown and crispy. Take them out of the oven and top with ½ of the shredded cheese, corn, black beans and bacon. Top with remaining cheese. Be sure not to use any low fat or skim cheese, they do not melt very well and will leave a undesired texture.
Stick the tots back in the oven for an additional 5-8 minutes.
Top with sour cream, sliced green onions and pico de gallo Serve immediately.
A simple Pico de Gallo Recipe : 3 roma tomatoes, diced 1/4 red onion, minced 2 tablespoons chopped fresh cilantro ½ jalapeno pepper, seeded and minced 1-2 teaspoon lime juice 1 clove garlic, minced 1 pinch ground cumin, or to taste salt and ground black pepper to taste Stir the tomatoes, onion, cilantro, jalapeno pepper, lime juice, garlic, cumin, salt, and pepper together in a bowl. Refrigerate at least 3 hours before serving. |
