Baked beans over time have had less and less meat added to the beans. These meaty baked beans are loaded with tender pork that is pulled and combined with the beans can be a hearty meal in itself or a great side dish. Homemade baked beans are a very easy dish to make and tastes better then the pre-made ones you can get in the store. With the addition of the brown sugar adds a sweet flavor that is balanced out the the tangy spice of the dijon mustard. Check out the recipe below in post.
Over medium heat, heat the oil in a dutch oven or heavy bottom pot until simmering. Add the onion and pork chunks and cook until onions are soft and pork is lightly browned, about 5 minutes. Add the garlic and cook until fragrant, about an additional 30 seconds. Add the water and bring to a boil. Cover and place in oven for about 1 hour.
Remove the pot from oven and add the bean, ketchup, brown sugar, and mustard. Stir until combined and return uncovered to the oven for an additional 2-3 hours or until sauce has thickened and beans and pork is tender.
Remove pork from pot and tear apart and return the pork back into the pot. Stir until well combined and season with salt and pepper to taste.
