With a lot of family super busy throughout the week it is sometimes hard to find a dish that is easy and still has a great amount of flavor. This mexican-style pasta skillet is a great option for an easy dinner since there is only a few ingredients and very easy to find ingredients at the grocery store. The chipotle peppers add a great smokey flavor and a bit of heat that isn't over powering but transforms the dish to what it is. The whole meal can be made pretty much in the time it takes to make the pasta. Check out the recipe below
In a large pot, cooked the pasta until al-dente. Cool under water, do not add oil to pasta. If you add the oil to the pasta the sauce will not stick to the pasta, that is nothing pleasing to the eyes and the dish will just not come out right. As the pasta cooks, In a large skillet, add the olive oil heat over medium heat until hot. Salt and pepper the chicken pieces and cook in the oil until browned, about 4-5 minutes. Add the onions and garlic, cook until softened and chicken is cooked through.
Add the diced tomatoes, chipotle and adobo sauce and corn. Cook until heated through and well combined. Add the pasta and toss in the sauce. Stir in about ½ cup of cheese and toss. Season with any additional salt and pepper.
Transfer to bowls and sprinkle remaining cheese over pasta. Makes about 4 servings.
