Spoonbread is a classic dish that has the flavors of cornbread, but comes out soft and creamy that is spooned from the pan and eaten with a fork. It is technically not a type of bread, but more of a corn pudding or souffle by how it is prepared by using eggs for leavening and structure. Spoonbread has a great sweet and savory flavor that melts in your mouth and can be served as a substitute for potatoes with any kind of meat or poultry.
In a mixing bowl, whisk together the cornmeal, salt and soda together.
In a separate bowl, whisk the eggs, milk and oil until mixed well. Add the green chilies and both corns and mix well. Fold in the cornmeal mixture into the wet egg mixture until smooth.
Spoon half of the mixture into a greased 9-by-9-inch or equivalent baking pan. Sprinkle half of the cheese on top. Repeat layers, ending with cheese.
Bake uncovered at 350 degrees for 45 minutes, or until a wooden pick inserted in the center comes out clean.
