While I was on a vacation to Washington DC, I had an amazing chocolate pecan pie that has stuck with me for the past week. the richness and sweetness of the pie was fantastic. For my Mini Chocolate Pecan Pie Cookies, I added the richness of the shortbread cookie in place of the pie crust and they are packed with a rich chocolate flavor that mixes with the nutty flavor of the pecans makes these an amazing addition to your normal holiday cookies, or anytime of the year. Check out the recipe below.
Combine the flour and sugar in a mixing bowl. Using a pastry blender or two knives cut the butter into the flour and sugar until a fine crumble is formed. Start kneading the mixture until smooth and ball is formed.
Roll the cookie dough into a 1/8"-1/4" thicken and cut out using a 2" round biscuit cutter or cup measuring the same size. Place each round into a hole of a prepared mini muffin pan making sure it is pressed into each cup.
Spread the chopped pecans and mini chocolate chips into each cup.
In a bowl, whisk the eggs, granulated sugar, brown sugar, corn syrup, maple syrup, vanilla, and salt. Pour about 1 teaspoon into each cup over the pecans and chocolate chips.
Bake for 25-30 minutes or until the filling is set and cookie is golden brown around the edges. Let cool for 5 minutes before removing from pans.
