During the summer, the last thing you want to do is be baking with a hot oven heating up your house to have a great dessert. These No-Bake White Chocolate Lime Cheesecake Bars are the perfect solution to eliminating that problem with no need for that hot oven. The cheesecake bars come out with a great mixture of sweetness from the white chocolate and tart from the lime juice and zest. These are perfect for the next backyard barbecue or just to enjoy on a hot summer day. The preparation takes about 15-20 minutes then let the bars set up in the refrigerator for couple hours.
Stir white chocolate pieces in a small metal bowl set over a saucepan of simmering water until melted and smooth. Remove bowl from over water.
Finely grind cookies in processor, can be done in batches. Add 2 tablespoons melted white chocolate to the ground cookie mixture and mix until clumps together.
Line an 8 inch round pie pan with foil, extending over all sides. Firmly press mixture onto bottom of prepared pan. Set aside while making the filling.
Beat the whipping cream in a mixing bowl until medium peaks are formed.
Beat cream cheese, sugar, lime juice, and lime peel in a separate bowl until smooth. Beat in remaining melted white chocolate.
Fold in whipped cream carefully until all combined. Spread over prepared crust.
Chill until filling is slightly firm, 2-3 hours. Using the foil, lift cheesecake out of the pan. Cut into 8 wedges. Garnish with white chocolate curls and grated lime zest, if desired.
