As the new year begins, it seems like everyone is trying to eat better after the long holiday season full of amazing food and desserts. This oatmeal blueberry bread is the perfect nutrient dense breakfast for on the go or to enjoy on a quiet weekend morning. The bread comes out moist and packed with an amazing blueberry and cinnamon flavors. The plus is it is very easy to make and doeskin take long to prepare.
In a medium bowl, whisk together the flour, oats, sugar, baking powder, cinnamon, baking soda and salt. Set aside 2 tablespoons of dry mix in a separate bowl.
In a clean empty bowl, whisk together the yogurt, oil, vanilla, lemon zest and eggs until combined and smooth. Slowly add dry ingredients and fold until just incorporated.
Add the blueberries to the dry mix that was set aside and toss to coat.
Carefully fold in the blueberries then pour batter into a prepared greased bread pan. Bake at 350°F degrees for 55-60 minutes or until a toothpick comes out clean.
Let cool on a cooling rack then remove from the pan carefully. Serve warm. Once fully cooled wrap the loaf air tight.
