I know the sound of potato chips in cookies does sound a bit odd, but they are a classic old fashion cookie that pack a great balance of flavor with every bite. The preparation is very easy and only a few ingredients that are even easier to find. Potato chip cookies have a great sweet and salty flavor that will please everybody. The cookies are full of butter flavor and crunch from the walnut and potato chip pieces.
Mash the butter, sugar, and vanilla extract together in a bowl until creamy and well combined.
Mix in the flour a little at a time. Gently fold in the potato chips and walnuts.
Drop dough onto the prepared baking sheets with a 1 oz cookie scoop or 2 tablespoons. Press the cookie down into ½” tall discs.
Bake in the preheated 350° F oven until the edges are golden brown, about 15 minutes. Remove cookies from sheets immediately and cool on wire racks.
