When it comes to cookies, there is two sides you can be on, the soft and chewy or then thin and crispy side. Me personally, I love the thicker and soft cookies that are chewy. These old-fashioned oatmeal chocolate chip cookies come out chewy and stay chewy for days after you make them. The cookies are packed with chocolate chips and rolled oats (doesn't that make these healthy). The cookies are extremely simple to prepare and make in minutes. I am not a huge sweets person, but I love these cookies!!
In a bowl, mix together the flour,baking soda, cinnamon and salt.
In a separate bowl, using a mixer, beat the butter and both of the sugars until light and fluffy, about 2 minutes. Add the egg and vanilla extract and mix until smooth.
Slowly add the flour mixture until just incorporated. Beat in the oats and chocolate chips.
Form the dough into 1” balls with a cookie scoop or spoons and arrange on a lined cookie sheet, spaced 2” apart. Bake the cookies at 375°F for 12-14 minutes or until lightly browned around the edges. Repeat with any remaining dough.
Recipe will make 2.5-3 dozen cookies. Store the cookies in an air tight container.
