The Orange Blossom Muffin is classic muffin that is simple to prepare and full of citrus flavor and crunchy pecan pieces. It's a great muffin if you are not a big fan of over sweet muffins but still has enough sweetness to enjoy. The muffins take about 10 -15 minutes to prepare and about an additional 15 minutes to bake and come out moist and fluffy. In a air tight container, they will last for a few days.
Combine the Flour, Baking Powder, salt, Ginger, and Cinnamon in a large mixing bowl.
In a separate bowl, whisk together the egg, orange juice, marmalade, sugar and oil until combined.
Slowly add the dry ingredients into the wet ingredients just until dry ingredients are moistened. Gently fold in pecans until just combined.
Spoon batter into greased or paper lined muffin pans, filling two-thirds full.
Bake the muffins at 400F degrees for 13-15 minutes or until lightly browned. Cool 5 minutes in pan, then on a cooling rack.
Place the muffins in an air tight container once fully cooled.
