As the holiday season is coming up and families coming together, you need a good easy breakfast that is filling and delicious. Overnight french toast is a great hassle free breakfast that keep everyone together in the morning. Its is very little prep to set up the night before and is only a few minutes in the morning putting it in the oven. The cranberry overnight french toast has the perfect blend of tart from the cranberry and richness of the custard, then topped with a sweet streusel that really finishes it off. The hardest part is smelling it cook as you are hungry in the morning, check out the recipe below in this post.
Place granulated sugar and cranberries in a medium bowl. Use your fingers to mix the cranberries and stir to combine. Set aside.
Cut the bread into 1 inch pieces. Place the bread cubes in the baking dish and arrange them into a level layer. Sprinkle the cranberry sugar mixture over bread.
In a large bowl, combine the eggs, milk, maple syrup, vanilla, orange juice and cinnamon. Whisk until well combined and then pour evenly over the bread.
For the streusel, stir together the flour, brown sugar, and remaining cinnamon in a medium bowl. Add the butter pieces and then use a pastry blender or your fingers to work the butter into the flour mixture until the mixture begins to clump together. Sprinkle over the top of the french toast. Cover the french toast with foil and refrigerate overnight.
Bake, covered for 30 minutes at 350F degrees. Remove foil and continue to bake for another 20-30 minutes, until lightly golden on top and set in the center. Serve
