Scones are a great addition to any breakfast. But depending on the recipe and technique, scones can be dry and sandpaper-y with flavor comparable to cardboard. They can also over-spread and taste pretty boring. However, these scones are packed with flavor and sweetness. This paradise scone recipe promises uniquely crisp and buttery scones with crumbly corners and a soft, flaky interior. The scones are packed with white chocolate chips, coconut and lime flavor in every bite. Perfect for parties or a breakfast or mid-morning snack any day of the week.
In a bowl, combine the flour, sugar, baking powder and salt. Add the coconut, chocolate chips and macadamia nuts. Stir until well combined.
Add the cream, lime juice and lime zest to the flour dry mixture. Stir until everything is moistened. On a floured surface, powder out the dough and knead for about 2 minutes until a soft dough is formed. You might need to add a little flour if the dough is sticky.
Divide the dough into two balls. Roll the dough into two 10” round discs. Cut each of the discs into 8 wedges.
Transfer the wedges onto the prepared baking sheet pans spaced about 2” apart. Brush each with the melted butter and sprinkle with additional sugar if desired.
Bake at 375°F for 17-20 minutes or until lightly browned. Let cool for about 5 minutes and serve warm or let cool completely.
