Peach and Chile Chicken

Looking for dinner that has a great summer flavor that is also light and healthy. This peach and chile chicken is packed with a sweet and zesty taste with a mild chile flavor that everyone will love. The marinade takes only minutes to prepare in the morning and the chicken will soak in the flavors of the marinade all day while you are out. The chicken works great cooked on the grill or in the oven in about 20-25 minutes. The dish is refined sugar free making it perfect for a paleo diet.

Peel and dice the peaches. Frozen peaches do work well for this recipe if fresh peaches are not available. In a blender or food processor, blend the peaches, chili sauce, lime juice, honey, salt, pepper, garlic, onion powder, oil, orange juice, and wine. It should be a smooth and bright orange color.  Set aside ⅓ cup of the sauce to top once the chicken is done.

Pat the chicken dry and place in a bowl or zip lock bag. Pour remainder of peach marinade over chicken. Place chicken in the refrigerator to marinade for at least 2 hours up to overnight.

Preheat the grill over medium-high heat. Place the chicken onto the grill and brush with the remaining chicken marinade from the bowl or zip lock bag. Grill for about 15-20 minutes or until the chicken is no longer pink. Flipping over once halfway through.

For cooking in the oven, Preheat the oven to 425°F. Place chicken in a baking dish and about 1/4 cup of the marinade from the bowl or zip lock bag on top of chicken. Bake for 25 -30 minutes. Check at 25 minutes for doneness. Broil at the last minute to caramelize marinade.

​Serve the chicken over white rice with the additional peaches and chopped cilantro over the top. Split the remaining ⅓ cup of sauce over the chicken and rice
