In the summer, the one fruit that comes to mind is a ripe peach. The sweetness is the best part of the summer. In these peach white chocolate cookies, the sweetness comes out and makes these soft and chewy cookies a summer staple. The cookies take no time at all to prepare and bake within 15 minutes. The cookies also make a fantastic ice cream sandwich with vanilla ice cream pressed between two of these cookies.
In a large bowl, cream the butter and both sugars until light and fluffy, about 5 minutes. Beat in egg and vanilla extract.
In another bowl, whisk flour, cinnamon, cream of tartar, baking soda and salt. Slowly add and beat into the creamed mixture. Stir in peaches and white chocolate chips.
Spoon the dough into 2 tablespoon balls about 2” apart onto parchment-lined baking sheets.
Bake in the oven at 350°F until set and edges are light brown, about 15 minutes. Cool on pans for 2-3 minutes, Remove to wire racks to cool. Store in an airtight container.
