If you are a fan of the peanut butter cookies, you will love these sweet and fun sweet pretzels. They are packed with peanuts in and out. Unlike peanut butter cookies, there is no peanut butter in these. These peanut pretzel cookies are make by mixing sugar and peanuts in a food processor to create a sweet peanut/sugar mixture. They are a fun dessert that kids love to make and eat.
In a food processor, pulse the granulated sugar and 2/3 cup peanuts until ground. Pour the mixture into a large mixing bowl.
Add egg, separated egg yolk, butter and milk. Mix until smooth. Add the flour and baking powder and mix until combined. Press the dough together and wrap with plastic wrap and let chill in the refrigerator for 1 hour.
Roll out the dough into a square and divide into 20 equal pieces. Roll out each into a 8-9” rope, about ½” thick. Loop the dough ends over the other into a pretzel shape. Place on a lined sheet pan. Repeat with remaining pieces.
Chop the remaining ⅓ cup of peanuts into small chunks. Brush the cookies with the egg whites and sprinkle with chopped peanuts. Bake in the preheated 325°F oven for 20-25 minutes or until the cookies are lightly browned on top.
Let the cookies cool on a wire rack. The cookies can be stored for about 1 week in an air tight container.
