If you are looking for a soft and chewy cookie around the holiday season, you gotta check these peppermint M&M cookies out. The cookies come out with a crispy chewy outer sides and the center is pure chocolate and chewy goodness with a touch of peppermint for the holidays. The cookies can be made within minutes, perfect for the craziness of the holiday season or any time of the year.
In a separate mixing bowl, beat butter and both sugars until light and fluffy, about 2 minutes. Add the egg and the peppermint and vanilla extract, mixing until combined, scraping the sides of the bowl as needed.
In a mixing bowl, whisk together flour, baking powder, baking soda and salt. Set aside. Slowly add the flour mixture to the butter sugar mixture until just combined on low speed.
Using a spatula, stir in the white chocolate chips and ¾ of the M&M's.
Spoon the dough into about 2 tablespoon balls pressing them into ½ disks about 2 inches apart. Press in the remaining M&Ms into the top of the cookies.
Bake the cookies in the oven at 350°F for 10-12 minutes or until the edges of the cookies are just set, this will create a soft cookie. If you are looking for a crisper cookie, bake the cookies for an additional 2-3 minutes, or until the centers are fully set.
