As the holidays are right around the corner. It is time to find a few simple desserts that are easy and quick, but can serve your whole family. These pumpkin pecan pie bars have all of the flavors of pumpkin and pecan pie combine in these delicious dessert bars. They are baked on top of a buttery chocolate shortbread crust. They are definitely a crowd pleaser.
Whisk together the flour, brown sugar, cocoa powder, and salt in a medium bowl. Add the butter, and mix with a pastry blender or fork until combined. The dough will be crumbly but should hold together when pinched.
Press into the bottom of your lined 9"x 13" pan and bake at 350°F for 10 minutes. Remove from the oven.
In a medium sized bowl combine sugar, pumpkin, evaporated milk, eggs, and pumpkin pie spice. Whisk for about 1-2 minutes. Pour over the crust. Bake for 20 minutes at 350°F. Remove from the oven.
Combine brown sugar and pecans. Once the filling is cooked, sprinkle the pecans mixture over the filling. Continue to bake for 15 -20 minutes or until a knife inserted in the center comes out clean.
Cool completely, cut into squares and top with whipped cream.
