When you are busy and looking for a great tasting easy dinner that takes no time at all to get together. These Quick and Easy BBQ Chicken Quesadillas are packed with tender chicken pieces, creamy colby jack cheese, crispy bacon, and fresh green onions all on top of a tortilla covered in your favorite BBQ Sauce. Then pan fried and come out crispy golden brown that gives a great crunch when bitten into They’re simply incredible. The best part is that this recipe can be adapted to fit your desires, you can add more cheese if you're a cheese lover, the chicken can be replaced with black beans for a vegetarian option and kids love help making these to fit their picky appetites.
After you have the chicken and bacon cooked. On a cutting board or large place, spread 1 tablespoon of BBQ sauce over each of the flour tortillas.
Top equally with the cheese on each tortilla (should be about ¼-⅓ cup on each). Spread the chicken, bacon and green onions equally over half of each tortilla.
In a pan over medium-high heat, heat 2 teaspoons of vegetable oil in a 12” skillet. Add one of the quesadillas and cook until the cheese begins to melt, about 2 minutes. Fold over the cheese only side on top of the topped side and press to seal.
Remove from the pan and repeat with the remaining quesadilla. Cut each of the quesadillas into 4 triangles, serve with sour cheese.
