As fall starts to creep in and the temperatures outside start to fall, there is nothing like a great bowl of hearty chili to make you feel warm inside. This quick and easy beef and bean chili is great way to fill that void. The chili has a great chili taste you expect and is full of beef, beans and vegetables cover by a thick rich sauce. The bonus is that chili is mostly made with ingredients that most pantry's already have and pretty much any of your favorite beans can be used. If you are looking for vegetarian option, just replace the beef with double the beans. Check out the recipe below.
Heat 2 teaspoons oil in Dutch oven over medium-high heat until just smoking. Add beef, diced onion and diced green peppers breaking up pieces with spoon, until all liquid has evaporated and meat begins to sizzle, 10 to 15 minutes.
Stir in garlic, cumin, chili powder, oregano, salt and cayenne and cook until incorporated. Add the garlic and cook until fragrant, about 30 seconds.
Stir in beans, diced tomatoes, tomato sauce and diced chilies. Bring to simmer, then cover and reduce heat to low, and cook, stirring occasionally, until thickened, 50 to 60 minutes.
Season with salt to taste. Serve with your favorite toppings.
