Soup is one of the easiest meals to prepare. It takes very little effort and it tends to one use very few dishes to make. This creamy potato soup is a great example. The soup is a one pot dish and is loaded with potato and cheese goodness that takes around 30 minutes to prepare. The soup can be prepared with milk or additional stock in place of the half and half to make it healthier. Check out the recipe below in this post.
Add the butter to a large dutch oven or pot over medium high heat. Add the diced onion and cook until softened and translucent. Add the minced garlic and stir in the flour until a paste forms and allow this to cook for about 2-3 minutes until the flour has a light golden color.
Pour in the chicken stock and cream in the pot. Add in the diced potatoes, salt and pepper. Stir to combine. Bring the pot to a simmer and cook stirring occasionally until the potatoes are softened and easily mashed.
Turn heat off and using an immersion blender or a blender in small batches, blend the soup until most of the potatoes are blended and the soup is creamy.
With the heat still off, stir in the shredded cheese. Stir to combine. Season with salt and pepper to taste. Serve in bowls topped with slice green onions and additional cheddar cheese or even bacon if desired.
