Chinese restaurant-style fried rice is a simple, quick and easy dish that can be made with leftover meat and rice. You can make this fried rice with chicken, beef, pork or even tofu as a vegetarian option. Fried rice has ingredients that most pantry's have and can be made in under 20 minutes to feed a whole family and tends to be a money conscious dish. Check out the recipe below in post.
Heat a large skillet over medium-high heat. Swirl oil to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. As soon as the egg has set, turn it out of the pan onto a cutting board. Let the eggs cool then cut into 1 inch pieces.
Add garlic, chili paste, ginger, soy sauce, sesame oil in a bowl to combine.
Wipe out the pan with a towel and heat the remaining oil over high heat. Add mushrooms and cook until tender, about 1 1/2 minutes.
In the pan with the mushrooms, add the rice and pork. Stir until combined. Add the sauce and stir-fry for 2 to 3 minutes.
Add the carrots, peas, and cooked egg. Stir until heated through, about 2 to 3 minutes. Serve immediately.
