As summer is coming to a slow end, the tomato plants are producing so much that its hard to keep up. If you are in the same situation these quick and easy spiced pickled tomatoes are perfect. The pickled tomatoes are perfect on a crisp green salad, grilled meats and the best, crusty bread that soaked up the delicious pickling liquid with the tender tomatoes on top. These pickled tomatoes take no more than 30 minutes to prepare and a few more hours to soak up the pickling liquid.
In a medium skillet, heat the oil. Add the garlic, grated ginger, ground mustard, black pepper, turmeric, ground cumin and cayenne pepper and cook over low heat until fragrant, about 2 minutes. Carefully pour the vinegar, brown sugar and salt. Bring the mixture to a boil, stirring. Remove from the heat.
In a large heatproof bowl, combine the tomatoes, scallions and jalapeƱos. Stir in the hot pickling liquid and let stand at room temperature to cool for 4 hours.
Serve or place in an airtight container. The pickled tomatoes can be refrigerated for up to 3 days.
