As we are in a week of record cold here in Minnesota, along with most of the rest of the country, there is no better time for some great soup to keep us warm. This ham and corn chowder is not like the typical classic version, it is packed with vegetables along with the ham and corn. It is a great hearty soup the is packed with flavor and color that brightens up any lunch or dinner but is healthier with milk in place of cream. Check out the recipe below.
In a stock pot, melt the butter then add the onion, celery, peppers and ham. Cook over a medium heat until the vegetables are soft, about 5-7 minutes.
Add the flour and mix until well incorporated and there is no clumps of flour in the pan and cook for an addition 2-3 minutes.
Add the chicken stock and milk and bring to a high simmer and let the soup start to thicken. Once the soup has thicken, add the remaining ingredients and let cook over a low heat for 30 minutes. Season with salt and pepper. Recipe makes six servings.
