If you are looking for a new and fun way to make chocolate chip cookies you got to check these cookies out. These raspberry and white chocolate cookies are soft, chewing and busting with delicious flavors from the white chocolate and fresh raspberries. Also the raspberries don't just add flavor to these cookies it also brings a beautiful red color swirled throughout the cookies. These cookies are very easy to make and can be made in well under 30 minutes from start to finish.
In a mixing bowl combine the flour, baking soda, and salt in a small mixing bowl. Set aside. In a large mixing bowl, cream butter and sugars until fully combined. Mix in eggs and vanilla until fluffy.
Slowly add in flour mixture just until incorporated. The dough will be on the drier side since the berries will release extra liquid when baking. The dough should be able to clump together.
Gently fold in the white chocolate chips and raspberries. Frozen raspberries can be used if needed, just keep the frozen until ready to cut down on them bleeding into the dough.
Scoop rounded tablespoon (or use a cookie scoop) 2 inches apart on lined baking sheet. Bake at 375 degrees for 10-12 minutes or until golden brown.
Let rest on pan for 5 minutes the move to a cooling rack.
