The salmon is quickly pan seared to lock in the juices, leaving you with moist salmon and the super quick sauce helps bring out the natural sweetness of the fish without overwhelming the taste of the fish.
Salmon is one of the best fish to cook with as it has a thick meaty fillet and mild flavor, it can accept sauces and marinades very easily. The flavor combinations are never ending.
In a bowl, Mix together the dijon mustard, maple syrup, garlic and green onions. Set aside.
Pat the salmon fillets dry with paper towels and season with salt and pepper.
In a large skillet, heat the vegetable oil over medium high heat until the oil is about to smoke. Add the two salmon fillets skin side up and saute until salmon is cooked through, flipping over once, about 7-10 minutes. Transfer fillets to a serving dish, cover and repeat with remaining fillets.
In the now empty hot pan, add the sauce and heat until warm throughout and serve sauce over the salmon. Serve right away.
