This easy prep sausage and egg casserole is the perfect dish for your next brunch or get-together. The casserole is packed with pork sausage, fluffy eggs and cheddar cheese. The homemade bread croutons soak in the egg and keep the casserole firm and moist throughout. There is no need to soak the casserole overnight and can be prepared and cooked all within one hour.
Preheat the oven to 375°F. In a mixing bowl, combine the bread, garlic and onion powder, and salt. Drizzle olive oil over bread while stirring. Stir well until bread is coated by all ingredients and olive oil is absorbed.
Spread the bread cubes into an even layer on a sheet pan. Bake for 10-12 minutes, or until golden brown and crisp. Set aside and reduce the oven temperature to 350°F.
Cook sausage in a large skillet over medium-high heat 8-10 minutes or until thoroughly cooked, stirring frequently; drain most fat off.
Whisk together the eggs, half & half, maple syrup in a large bowl until well blended.
Add bread cubes, cooked sausage and 1 cup cheese. Pour into the skillet or baking pan and sprinkle with remaining cheese and green onions.
Bake for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.
