One of the easiest meals to prepare for a family or large gathering is a simple pasta dish. Pasta dishes are easy and very inexpensive to prepare and goes a long way. This Sausage and mushroom penne gratin is a great substitute for the standard pasta bake. It is quick to make since you cook everything on the stove top and bake really quick under a broiler to get the brown and bubbly you enjoy from a dish that has baked for a long time in the oven. In a skillet over medium-high heat, cook the sausage with 1 tablespoon olive oil. Stir occasionally and breaking into small pieces until brown. Add the sliced mushrooms and remaining oil and cook until mush rooms are golden brown, about 3 minutes. Add the garlic and cook until garlic is fragrant.
Add the cream, chicken stock, ½ teaspoon salt and ¼ teaspoon black pepper. Cook over high heat until sauce has thickened, about 4-5 minutes.
Spread evenly over the pasta stirring into the pasta. Season with salt and pepper if needed to taste.
Top with remaining mozzarella cheese and place under broiler and let the cheese brown on top, about 3-5 minutes.
