One of the best weeknight dinners is a classic stir fry. It has the trifecta that every meal needs, protein, vegetables and starch. In this shrimp lo mein with broccoli has all of that, plus a easy sauce that can be all done withing 20-30 minutes from start to finish. The dish is packed with bright green tender broccoli and fresh shrimp in every bite. It is perfect for the busy family that everyone will enjoy.
In a bowl, combine the sesame oil, oyster sauce, soy sauce, brown sugar, rice wine vinegar, salt and pepper. Set aside.
Heat the oil in a large pan or wok over high heat. Add the shrimp, garlic and ginger. Cook until the shrimp begins to turn pink, about 1 minute.
Add the green onions and broccoli to the pan. Add 1 tablespoon of water and cook until broccoli turns a bright green color and is tender, about an additional 2-3 minutes.
Add the cooked noodles and sauce to the pan. Toss to coat everything and hot, about 1-2 minutes. Serve hot as is or over cooked rice.
