The recipe is easy to make and has only easy to find ingredients that are inexpensive, and pack a great creamy lemon flavor that your whole family will like. Pat dry the chicken breast with a paper towel and season with salt and pepper. Heat 1 tablespoon of oil in a pan, once the oil is hot, add the chicken to the pan. Cook both sides for about 5 minutes per side until the chicken is fully cooked. Place cooked chicken on a plate and cover with foil for 5 minutes, then slice.
Put the chicken pan back onto the heat the remaining oil and add the garlic and ¾ teaspoon of black pepper, cook until fragrant, about 1 minute. Add the lemon juice and cook until about 1 tablespoon of juice remains. Remove from heat and toss the chicken and juices from plate into the pan.
In a bowl, combine the ricotta, parmesan, basil and lemon zest. Cook the pasta according to the directions and drain completely, save about 1 cup of the pasta water.
Place the pasta back into the pot. In a bowl, combine the ricotta, parmesan, basil and lemon zest. Add the chicken mixture, cheese mixture and ½ cup of the water to the pasta. Mix until combine adding more water if needed. Season with salt and pepper then serve.
