The shortbread cookie is one of most versatile cookies out there. Shortbread cookies are found all over the world, a slightly difference in the preparation they all have that rich butter flavor in common. In these Hawaiian nut cookies, is the standard rich flavor from the butter along with the sweetness from the sugars and coconut flakes that goes great with the great crunch from the macadamia nuts. The recipe takes well under 30 minutes from start to finish and you will end up with 3 dozen moist and chewy cookies that your friends and family will love.
In a bowl, beat together the butter and both sugars on medium speed until light and fluffy. Beat in the egg.
In a bowl whisk the flour and baking powder together. Add the flour mixture slowly to the butter mixture on low speed until fully combined.
Stir in the coconut and macadamia nuts.
Using a cookie scoop or a teaspoon drop dough onto a lined sheet pan 2 inches apart.
Bake the cookies until the cookies are golden brown around the edges, about 8-10 minutes. Transfer the cookies to a wire rack to cool completely.
