This Simple No Cook Strawberry Ice Cream couldn’t be any easier to make. Absolutely no cooking is needed. Typically when you make homemade ice cream, typically you make a custard-base for the ice cream that calls for eggs and cream. In this recipe, there are no eggs in this ice cream base, so no cooking is needed. The ice cream base is simply mixed together and then processed in an ice cream maker. The ice cream recipe turns out a creamy ice cream that is sweet and delicious. The strawberry flavor shines through perfect for a hot summer day.
Coarsely chop the strawberries up with a food processor or masher. Add the sugar, lemon juice and salt and let sit for 10 minutes.
Transfer half of the strawberry mixture to a blender or food processor. Add the heavy cream and puree until smooth, about 20-30 seconds. Return the cream mixture to the remaining strawberries and stir together. Place into the refrigerator for about 3-4 hours. The mixture should be firm slightly.
Add the mixture to an ice maker and mix until frozen. Place the mixture in an airtight container and let firm completely. The ice cream will keep for about 1 week.
