Looking for a quick and easy appetizer or even simple meal. Then you need to check out this sizzling roasted shrimp scampi. The shrimp takes less than 10 minutes to back and the preparation is about the same length. The ingredients are very simple and there is no wine or alcohol in the recipe making it perfect for anyone to make. The shrimp are cooked in a garlic, lemon and herb infused butter that bakes into the shrimp coming out super tender. Serve it over rice or toss in pasta and it will be a simple dinner too.
In a mixing bowl, mix the butter with the garlic, half of the parsley, lemon zest, lemon juice and thyme. The butter can be done up to a few days ahead of time.
On a sheet of paper towels, dry any moisture off the shrimp and sprinkle with salt and pepper. In a baking dish, shingle the shrimp, tails up, with even spacing throughout. Dot the shrimp with the flavored butter evenly.
In an oven preheated to 450°F, roast the shrimp for about 10 minutes, until the shrimp are pink and the butter is bubbling. Sprinkle the shrimp with the remaining chopped parsley and the basil leaves. Serve with the butter drizzled over.
