The State fair up here in Minnesota is a serious deal around here. You can get 100's of different dishes and everything under the sun deep fried for your enjoyment. Unfortunately this year we will have to be missing is due to the status of the world and other things. This state-fair funnel cake is a simple little dish that is fun for both and kids to make. The batter is only a few ingredients, almost all are staples in everyone's kitchen and they fry up within minutes. My daughter loves watching them fry and puff up into a fun web design then drenching them in powder sugar and other sweet tasty toppings.
In a mixing bowl, beat the egg, milk, and vanilla until well blended.
In another bowl, whisk flour, baking powder and salt. Add the egg mixture to the flour mixture and beat until smooth.
In a deep skillet or deep fat fryer, heat about 2-3 inches of oil to 375 degrees. Holding the funnel with your finger placed on the bottom over the hole. Ladle about ¼- ⅓ cup batter into the funnel. Holding the funnel a few inches above the oil, release your finger and move the funnel in a spiral/criss-cross motion until the batter is gone. Don’t worry about making the perfect shape, just try to fill in any large gaps.
Fry for 2-3 minutes on each side, or until golden brown. Adjust the cooking temperature if your cakes get dark too quickly. Drain on paper towels. Dust with confectioners’ sugar, whipped cream, fruit, chocolate syrup or any other favorite topping.
