If you are looking for a great recipe to use up those summer squash, this summer squash and sausage pasta skillet is the perfect recipe to use. The pasta is cooked directly in the sauce so the pasta is filled with all of the flavors from the sausage and tomatoes. Then is topped with creamy parmesan cheese and bright bold flavors of the freshly cut basil. It is the complete one dish meal from start to finish so clean up is a breeze and preparation and cooking takes less than 30 minutes. The squash can easily replaced with zucchini with no changes to the recipe.
In a 12” skillet, cook the italian sausage over medium--high heat, stirring occasionally until cooked and light browned, about 5 minutes. Add the cut squash and cook until starts to soften, about 3 additional minutes
Add the tomatoes with the juices, stock, pasta and ½ teaspoon salt to the pan. Bring to a boil then cover and reduce the heat to low. Cook for 15 minutes while stirring occasionally until pasta is al dente.
Stir in half of the grated parmesan into the pasta. Season with any additional salt and pepper if needed.
Remove from heat and stir in the cut basil leaves and serve.
