Looking for something simple and easy to serve as an appetizer for your next gathering that uses a handful of very common ingredients that are found at all grocery stores.
These sweet and spicy chicken lettuce wraps are the perfect answer. The chicken takes only minutes to cook and the sauce is even quicker. The sauce has a great sweetness from the honey and some heat from the chili sauce and red pepper flakes. The chicken is even great served over vegetables or rice for a quick and easy dinner option.
Place a large skillet over medium high heat and add the oil to the skillet. Once oil is hot, add your chicken pieces. Season with onion powder, garlic powder, cayenne pepper and salt. Sauté for 4 to 5 minutes uncovered, flipping over occasionally. Chicken should have some browning on the outside and should be about done.
Meanwhile, stir together soy sauce, honey, chili garlic sauce, and crushed red pepper flakes in a medium bowl. Taste. If it's not hot enough for your liking add one extra teaspoon of chili sauce.
Pour sauce into skillet with chicken. Let the chicken and sauce simmer over medium-high heat for 4 to 5 minutes or until sauce has thickened and chicken is completely cooked through.
Spoon the chicken into the bibb lettuce leaves and top with chopped peanuts or cashews if desired.
