As we are hit with hot weather up here in Minnesota, there is nothing like a cool and refreshing side dish that can go with practically anything. In this Thai Cucumber Salad, the salad is simple to make, taking under 20 minutes to make. The salad is an easy and quite healthy side dish. The dressing is a sweet vinegar style that is packed with a bit of a heat that goes great over the cold crisp vegetables. The best part of this recipe is that it is indeed vegan and vegetarian.
In a bowl, combine the sliced cucumbers, peppers and red onion.
In a separate bowl, make the dressing, by combining the sugar, sweet chili sauce, rice wine vinegar and pepper flakes if desired. Stir until smooth.
Toss the cucumber mixture with the dressing. Let the salad marinate in the refrigerator for 1-2 hours. Top with the peanut and cilantro and mix. Season with salt and pepper to taste and serve immediately.
