Halibut is a very versatile fish, you can grill, poach, pan fry and the easiest roasting in the oven. This walnut dijon crusted roasted halibut is very simple to prepare, start to finish it can be done in 15-20 minutes. The oven does all of the cooking. The only thing you have to is top the halibut fillets with the crust topping. Halibut is a very lean fish however, so make sure you don't let the fish get overcook and dries out. In a small mixing bowl, mix the walnuts, panko, butter and all herbs until all combined.
Place the halibut fillets on the prepared sheet pan. Sprinkle each fillet with salt and pepper. Brush each fish fillet with the djion mustard equally.
Sprinkle panko-herb mixture atop fish, dividing equally and pressing to adhere. Roast fish until just opaque in center and the crust is golden brown, about 8- 10 minutes.
