As from Minnesota, we are a big art of the discovering different kinds of apples especially for northern climates. The most popular is the Honeycrisp, but almost every one is great flavored apple. The best Minnesota apples to bake with are haralson and zestar. This apple upside-down bread is a fantastic apple dish. The replacement of the sweet potato for the standard russet potato is a change that works great with the addition of the bread crumb topping that gives a great brown top and crisp to the sweet potatoes. These muffin tin frittatas are great since each is pre-portioned to a perfect size and can be customized to each persons preferences. The fillings choices are endless, I prefer the classic Western/Denver-Style filling of green pepper, onion, cheese and ham.
