As cinco de mayo is tomorrow, there is no better time than now to have this beer braised chicken tacos. I have done this recipe in the past when I first started my blog, however I have updated it and it is certainly a go to taco recipe. In this beer braised chicken tacos, the chicken is cooked in an amazing spiced packed liquid that makes it taste like no other chicken taco recipe, then pulled apart right before serving. The best part, it takes no more than 10 minutes of work from start to finish.
Season the chicken with salt and pepper. Add the chicken to the crock pot along with the garlic, onion, oregano, jalapeno, diced tomatoes, red pepper flake, cinnamon stick and beer. Cover and cook on high for about 4 hours.
The recipe can be done on the stove top as well. Saute the onions and garlic until softened, about 2 minutes. Add the remaining ingredients listed above and bring to a boil. Over and cook on low for about one hour.
Once the chicken has cooked through, remove the cinnamon stick and pill the chicken apart into small bite size pieces. Season with salt and pepper to taste.
Preheat the oven to 350F. Place the tortillas in foil and wrap tight. Heat the tortillas for about 6-8 minutes. Spoon the chicken on top of the tortilla and top with your favorite toppings.
