As summer is around the corner and its starting to warm up around here, its time to get the grill going. In these bourbon glazed pork chops, they are first marinaded then glazed with a thickened reduction of that same marinade. The pork chops come out tender and juicy inside and on the outside, there is a sticky bourbon infused glaze that sticks and caramelizes on the grill. This is a pork chop that is an instant crowd pleaser and luckily simple to prepare.
In a bowl, combine the olive oil, honey, soy sauce, fish sauce garlic and bourbon. Stir until smooth. Place the pork chops into a shallow dish or bag and pour the sauce over the pork chops. Let marinade for 30 minutes, flipping over half way. This marinade is also amazing on chicken and mild flavored fish like salmon.
Remove the pork chops from the marinade and pour the sauce into a large, wide saucepan set over medium heat. Bring to a simmer, then lower the heat. Let the sauce reduce until half, about 5 minutes. In the meantime, heat your grill over medium heat.
Place the pork chops on the grill and let cook for about 8-12 minutes depending on thickness and desired doneness, minimum of internal temperature of 145°F. Brush the glaze sauce over as the pork chops cook. Turn occasionally to prevent the sauce from burning.
Let the pork chops rest for about 5 minutes. The pork chops can be cooked in a hot cast iron skillet or heavy bottom pan over medium-high heat also. The glaze can be used as a side sauce if desired.
