As the holidays are coming to an end its is time to get back into work mode. One of my go to morning breakfast if the classic muffin. It is just so simple to make and easy to grab as you are walking out the door on a busy morning. These raspberry coffee cake muffins are insanely easy to make and soon enough your home will be filled the smell of fresh baked goodness. These raspberry coffee cake muffins don't just have one layer of great streusel topping, but has an additional layer in the middle that give an extra crunch (plus who doesn't like more streusel topping) and great flavor of the fresh raspberries.
As the holidays are here, families and friends will be coming together to spend extended time together and the need to feed many people at once is a difficult task to overcome. These pumpkin cranberry sheet pan pancakes are a great, hassle-free breakfast that makes many portions at once. The pancakes come of thick and fluffy and packed with great flavor. The preparation is only a few minutes and the oven does the rest. Check out the recipe below in this post.
As the holiday season is coming up and families coming together, you need a good easy breakfast that is filling and delicious. Overnight french toast is a great hassle free breakfast that keep everyone together in the morning. Its is very little prep to set up the night before and is only a few minutes in the morning putting it in the oven. The cranberry overnight french toast has the perfect blend of tart from the cranberry and richness of the custard, then topped with a sweet streusel that really finishes it off. The hardest part is smelling it cook as you are hungry in the morning, check out the recipe below in this post.
As from Minnesota, we are a big art of the discovering different kinds of apples especially for northern climates. The most popular is the Honeycrisp, but almost every one is great flavored apple. The best Minnesota apples to bake with are haralson and zestar. This apple upside-down bread is a fantastic apple dish. It can make a great breakfast but also can make a great dessert warm with a side of cold vanilla ice cream. The apples come out caramelized and the sugary glaze hardens slightly when it cools and covers all the sides as you flip it over onto a dish. Check out the recipe below in post.
Frittata is a great choice if you are cooking breakfast or brunch for a larger group. Its like a omelet with all of the fillings, but you don't have to deal with perfectly executed flipping. These muffin tin frittatas are great since each is pre-portioned to a perfect size and can be customized to each persons preferences. The fillings choices are endless, I prefer the classic Western/Denver-Style filling of green pepper, onion, cheese and ham.
Morning glory muffins are the classic fruit cakes long lost cousin, however ended up much better tasting and enjoyable to eat. However do not let that scare you away so quick. Morning glory muffins are probably one of those muffins your grandmother would make when you were a little kid and still be considered timeless and are still very enjoyable today. Morning glory muffins are loaded with all sorts of fruits and vegetables, from carrots to apples, pineapple to raisins to name a few. The muffins are very savory but does have sweetness and are moist, especially when eaten warm. They are the perfect on the go treat and a great way to get a picky kid to eat his or her fruits and vegetables. Check out the recipe below in post.
These Chocolate Peanut Butter Banana Protein Muffins are the perfect snack or breakfast for the person on the go. These muffins come out light and fluffy and pack with banana and peanut butter flavor and have no added refine sugars to them. The protein powder helps give you energy to the start of your morning as breakfast or get through the mid day slump as a snack or post workout treat. The all-purpose flour can be substituted for whole wheat flour for the people who are looking for more whole grains in their diet. Check out the recipe below in the post.
Doughnuts and muffins to me is the breakfast choice you have when you are looking for something extremely easy and fast to eat on a busy morning. Both are great in there own way, but doughnuts check so many more boxes since they are sugared filled and greasy from being fried. These chocolate muffin tin doughnuts have great characteristics of both, but the texture and richness you get in doughnut, but the ease of muffins when making them at home. With the baking process you don't have to worry about having oil at the right temperature and flipping them over mid way. Just scoop the batter in the muffin tins and let them cook hassle free for 20 minutes.
The weekend's to me are the only days I will sit down and actually have a breakfast. Hash browns are a classic favorite as part of a full breakfast. The downside for good hash browns is that you need a lot of oil to get a great crispy crust. For these potato waffles, the waffle iron gives a great golden brown crust while still having a tender and moist interior. The second good part is that you don't need to load the waffle pan with tons of oil so you don't have greasy potatoes like you will normally have with traditional hash browns. Check out the recipe below.
The art of making a great biscuit is not to over work the dough, you want to mix the dough just until everything moist and incorporated. These cheddar, bacon, and green onion biscuits are fluffy and packed full of flavor. The best part s that they come out huge, they are perfect to be sliced in half and filled with your favorite meats and transformed into a great sandwich, or my favorite way just how they are. Check out the recipe below.
